My friend made us a batch of these brownies when she came over for dinner and I just had to have the recipe.
It's super simple, but man - they have to be some of the best brownies I have ever tasted. Add some cream and OMG it's like heaven in your mouth.
Ingredients:
- 200g butter
- 2 cups caster sugar
- 1 cup coccoa
- 4 eggs
- 1 tsp vanilla essence
- 1/2 cup flour
- 1 tsp baking powder
- 200g chocolate chips
Melt butter in a large bowl (I just do this in the microwave). Sift in the cocoa, add the sugar and vanilla essence, mix to a smooth paste. Sift in the flour and baking powder, then add chocolate chips.
I put mine in a casserole dish, but the recipe says a 20cm x 30cm swiss roll tin. Bake at 150'C for 65 minutes.
The mixture should feel slightly under cooked, you can sprinkle with icing sugar once the brownie is cool.. I tend to serve mine warm with cream, so don't add any icing sugar.
I love how easy and quick this is to make, and once you have tasted it, you won't want to make any other brownie. I tried this one with white chocolate buttons, which was probably a bad idea, as the buttons were heavy and sunk to the bottom, so next time will just the smaller chips, so they disperse throughout the brownie mixture.
