These have been a favourite of mine ever since I can remember. I started making them for my hubby and he loves them just as much as I do, and now so does Keaton. They are super yummy and super simple to make.
You will need:
- 250g Butter or Margarine
- 2 eggs
- 1 cup chopped dates
- 1 packed of wine/ arrowroot/ marie biscuits
- 1 cup brown sugar (I tend to use a bit less, so don't add it all in at once)
- 1 tsp vanilla essence
Smash up the biscuits using what ever method you choose - you don't want them to become a crumb, you are looking for broken up chunks.
Melt the butter, sugar, and dates until thick (have a quick taste and if you think you need the rest of the sugar add it now).
Take off the heat and let the mixture cool a little, add the eggs and vanilla, and put back on the heat to cook the eggs.
Add in the crushed biscuits, and mix together.
Place mixture in a glass dish (20cm), flatten and sprinkle with coconut.
Refrigerate until set.
As an alternative you can roll the mix into balls and drop in coconut, and place on a sheet of baking paper and refrigerate.

DeleteI love a good slice, even better when it's a slice containing biscuits ;) I'm on a bit of a date + orange bender at the moment and wondering what these would be like with a bit of orange zest added...? If I try it out, I'll report back to you :)
